Here’s a recipe for Lamb Bhuna Masala Karahi:

Ingredients:

  • 500 grams lamb, cut into cubes
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 teaspoons ginger paste
  • 2 teaspoons garlic paste
  • 2 green chilies, slit lengthwise (adjust according to your spice preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds, crushed
  • 1 teaspoon dried fenugreek leaves (kasuri methi)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Fresh coriander leaves, chopped (for garnish)
  • Salt to taste
  • Oil for cooking.

Instructions:

  • Heat oil in a karahi or a deep pan over medium heat. Add the cumin seeds and let them splutter.
  • Add the chopped onions and cook until they turn golden brown.
  • Add ginger paste and garlic paste. Sauté for a minute until the raw smell disappears.
  • Add the chopped tomatoes and cook until they become soft and mushy.
  • Now, add the turmeric powder, red chili powder, crushed coriander seeds, and salt. Mix well and cook for a couple of minutes.
  • Add the lamb pieces to the pan and cook on high heat for a few minutes, stirring occasionally, until the lamb is browned on all sides.
  • Reduce the heat to low, cover the pan, and let the lamb cook for about 30-40 minutes or until it becomes tender. You may need to add a little water if the mixture becomes too dry.
  • Once the lamb is cooked, remove the lid and increase the heat to medium-high. Stir-fry the lamb for a few minutes until the masala thickens and coats the meat.
  • Crush the dried fenugreek leaves between your palms and add them to the lamb. Also, add the slit green chilies and garam masala. Mix well and cook for another 2-3 minutes.
  • Remove from heat and garnish with freshly chopped coriander leaves.
  • Serve the Lamb Bhuna Masala Karahi hot with naan, roti, or rice.
